
Mango & Saffron
Taste of summer, all year round.
Mango is easy to fake and almost always is. A flavour compound gets you a bright, confident, slightly cartoonish mango that tastes identical in every batch forever. It is cheaper, faster and more reliable than fruit.
We used dehydrated Alphonso pulp instead, and put saffron behind it. Saffron adds no sweetness. It adds the floral edge underneath that stops the mango reading like candy, and it costs more per gram than anything else in this range.
