Pistachio and cashew is the shortest recipe we make, at seven ingredients, and the one with nowhere to hide. Cashew does the work underneath, rounding the cookie so it does not finish thin. Pistachio arrives second, green through the crumb and slightly sharper.
If you are trying Un-Junked for the first time, this is the box to put in.
Most of a recipe is decided by what you refuse to put in it.
It is the default fat in commodity biscuit manufacturing because it is cheap, stable and forgiving. We use a coconut and sesame oil blend instead, which costs more and behaves less predictably in a bakery. The trade is a shorter, less industrial ingredient list.
A mango compound is faster, cheaper and identical batch to batch. Dehydrated Alphonso pulp and real saffron are none of those things. We took the harder version because the difference is on the tongue, not on the label.
The colour of these cookies is whatever the ingredients make them. That means some variation between batches. We would rather explain that than correct it.
Not as a substitution, and not as a diet product. Built eggless from the first trial so the cookie is complete on its own terms and the box works for more tables.

A brand name on a package is a signature. It says someone is accountable for every line on the back of it, not only for the promises on the front. Plenty of companies keep a careful distance between the two. We decided not to.
So all of it is here. The full ingredient deck for every flavour, word for word off the panel. The nutrition, the allergens, the country it is baked in, the food safety standard our bakery is certified to and when it was last audited. If there is a question we would rather not answer, that is usually the exact question worth answering.
Un-Junked is not a health product and it is not a claim about anyone else's cookie. It is a decision to build to a standard first and price it afterward, instead of the other way around. Four marks on every pack, and nothing behind them we are unwilling to show you.
We would rather you read the panel than trust the front of the box.

The bakery
Un-Junked is vertically integrated. The bakery is in the family, and the cookies are baked in India before being imported and distributed by Ghalley Holdings Ltd. of Port Coquitlam, British Columbia.
That is the part most brands cannot say. The recipe, the sourcing and the line are ours to set rather than ours to negotiate, so nothing here is a stock formulation bought off a supplier's shelf. It is why there is no palm oil in any of these four, why the tea masala is seven whole spices instead of a flavour compound, and why we can tell you exactly what is in a batch and why.
